Easy Mixed Fried Rice with Shrimps

Today I want to share with you how I made this Mixed Fried Rice recipe.
The Secret here to top off the taste will be noted down below :)
So, all you need is:
- 150 grams/ 5.2 oz of Basmati Rice
- 1 cup of Black Tiger Shrimps
- 3 beated Eggs
- 3/4 cup Chopped Onions
- 2 Garlic Cloves Chopped
- Mama Sita Chopsuey Pancit Canton Stir Fry Mix (half of it used)
- Cooking Oil
- 1/2 cup of Water
Now Mama Sita's mix is my secret to this recipe. No need for Soy Sauce or Salt & Pepper, these ingredients are all included in the mix!! Yes! And the taste in incredible.
Now, fill a medium saucepan pour your rice and add water which is just a little bit over the rice and bring it to a boil on high heat. Once water is absorbed, cover the rice by also turning the heat off and let it sit until you prepare the rest. This will allow your rice to steam up and cook just where we want it to.
This is how I prepare my rice but you can cook it either way you wish.
Get your pan ready for the shrimps and heat it up with a drip of cooking oil. Add your shrimps just until they change color on both sides. Be careful not to overcook them as they cook really fast!
*Note: My shrimps I had were already de-veined so I didn't had to go through this process.
Once ready set aside to cool down and chop your ingredients. Also, in the 1/2 cup of water add half of the stir fry mix and stir. Now that the shrimps have cooled down, peel them by starting underneath where their legs are attached and then peel of the shell. I tend to cut them into pieces but you can leave them as is.
Heat your wok with around 3 tablespoons of Cooking oil and add your onions and garlic. Once they start browning I add the eggs and stir until eggs are combined with the rest of the ingredients and as soon as your eggs have cooked through we can add the shrimps and rice!
Add the rice to the wok and stir to combine ingredients. Now add your stir fry mix and stir again.
Your meal is ready! Hope you Love it!

Coconut and Dates Ball Treats

This is a must try easy recipe that I guarantee you will love! This recipe was introduced to me by a dear friend and I went crazy with the taste of this simple no bake treat so I am introducing this recipe to you guys as well!
What you will need:
397 gr of Sweetened Condensed Milk (Milkmaid)
1 stick of unsalted butter
300 gr of coarsely crashed biscuits (Marie Biscuits)
3/4 cup of chopped dates
1 cup of shredded Coconut (1/2 to be used in the filling and 1/2 on top)
3/4 cup of coarsely chopped walnuts
First, place a pot on stove and using bain-marie technique, pour in your sweetened milk and butter until they melt and stir until combined.
In a big bowl crash the biscuits with your hands or use a blender if you wish to. Then add your chopped dates, walnuts ad 1/2 cup of the coconut. Once your bain-marie is ready pour your mixture into the bowl with the rest of the ingredients and stir well until all of the ingredients are combined.
Now roll the mixture into ball shapes and then dip them into the remaining shredded coconut and make sure their well coated! Refrigerate for 30 minutes.
You're done!
Optional:
You can also pour your mixture into a square baking pan and with your hands press firmly.
Then pour the remaining shredded coconut on top. Refrigerate, and then you can cut them into bite sized squared pieces or any shape you want.
Note: No need to grease your pan since this mixture wont stick from the butter we used in this recipe

Bacon and Avocado Sandwich
Here's how I make my ultimate Bacon and Avocado Sandwich! What you'll need for two portions:
- Ciabatta Bread
- 1 Avocado sliced
- 4 Slices of fresh Tomatoes
- 6 pcs streaky bacon
- Salt & Pepper
Optional:
- 2 fried eggs
Place your pan on low fire and lay your strips of bacon into the pan. Cook bacon on low heat until golden brown. Don't remove excess grease as we will use this later on.
Cut your ciabatta bread in half and through the middle to make two sandwiches. Place them into the pan facing down until lightly toasted from the excess fat from our bacon.
Once your bread is lightly toasted you can add your ingredients. I add bacon first and then the avocado and tomato slices. I tend to add a fried egg on top with salt & pepper which is optional. Either way this sandwich tastes great and totally recommend this one!
Simple and Delicious!
You can use any bread you like but I tend to use Ciabatta bread but any bread should do!

Angus Burger with Crispy Onions and Jack Daniels Sauce
So here's what you'll need to make this awesome burger:
- Bread of your choice
- Angus Beef Burger
- 1/2 tbsp. butter
- 2 Onions
- 1/2 cup of all purpose flour or any flour you wish
- 1/2 cup of Oil - to fry the onions
- Cheddar Cheese
- 1/2 tsp. Cumin
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- Salt & Pepper
- Jack Daniels Barbecue Glaze
How to:
Pure cooking oil in your pot and heat to 375 degrees F or 200 degrees C to fry the onions.
In the meantime cut your onions wedge shaped and then place them into a plastic bag with your flour, garlic & onion powder, salt and pepper. Close the plastic bag and shake!
Once all onions are coated with flour, take them out of the bag and shake-off excess flour and can fry them until golden brown.
Now melt your butter on a skillet and place burgers and then, spread cumin allover the burgers. I always add cumin as it makes beef smell and taste better! The trick here is to only turn the burgers once. So let one side cook before turning the burger to the other side. I like mine medium to well done so, once you turn the burger to the other side, place your cheddar cheese on top and until it melts and your burger should be ready!
Place your burger on top of your bread then add the onions and Jack Daniels Barbecue Glaze!
Mmmmmm...Taste is great!!!
